Wikipedia skriver att Emily Gottreich, (Adjunct Professor in Global Studies and Political Economy and Faculty Affiliate in the departments of History and Middle Eastern Languages and Cultures pÄ UC Berkeley) sÀger att versionen med kött eller kyckling "is a 'distinctively Moroccan dish' traditionally only found in Muslim homes owing to the Jewish dietary prohibition on the mixing of meat and dairy in a single meal."
Seffa med socker och kanel tillagas av marockanska judar pÄ natten pÄ högtiden Mimouna. Den versionen kallas ocksÄ Couscous Sucré et Sec. Sucré Àr socker och sec Àr torr pÄ franska (Wikipedia).
Jag har gjort denna, fast vegansk, glutenfri och sockerfri.
Jag utgick frÄn Epicurious men receptet Àr frÄn "The World of Jewish Desserts" av Gil Marks.
"For special occasions, however, [couscous] is sweetened and topped with dried fruits and nuts. Seffa is also made by mounding couscous on a platter and sprinkling sugar on top instead of stirring it. Seffa with dried fruits is a traditional Moroccan Hanukkah dish. For Rosh Hashannah, it is sprinkled with pomegranate seeds or small grapes. On Tu b'Shevat and other special occasions, it is garnished with datils rellenos (stuffed dates) and dried fruit. Moroccans prefer desserts rich and sugar, and their seffa is generally sweeter than Tunisian versions."

Ingredienser:
4 dl vatten
1 nypa salt
5 g solrosolja
240 g Coop Glutenfri Couscous av rÄris (~ 500 g kokt)
25 g Naturli' Ekologisk Vegan Block
3 msk ICA Sötströ
1/2 tsk malen kanel
1 3/4 dl mandelmjölk
Garnering:
Malen kanel
Sukrin Melis
Russin
Instruktioner:
VÀrm en spisplatta pÄ hög vÀrme. HÀll vatten i en kastrull. Koka upp. Ta bort kastrullen. HÀll i salt, solrosolja och couscous. Blanda. SÀtt pÄ lock. LÄt stÄ i 5 minuter. Fluffa med gaffel. VÀrm en spisplatta pÄ medelvÀrme. HÀll smör i en kastrull. SmÀlt. Ta bort kastrullen. Blanda i sötströ, kanel och mandelmjölk. TillsÀtt couscous och blanda. LÀgg pÄ tallrik och forma till berg. Strö pÄ kanel i stjÀrnmönster. HÀll pÄ sukrin melis pÄ toppen. LÀgg russin mellan kanel. Servera varmt.
